One tradition that has been passed down through the ages is the art of cooking. In the Maghreb, you will find sizzling tajines, fluffy couscous served with lamb, and delicate pastries accompanied by mint tea or strong coffee.
Each country offers its own distinct culinary character:
• Morocco is renowned for its rich, bold flavors and the liberal use of saffron.
• Tunisia delights in fiery, spicy dishes, pushing the boundaries of heat and flavor.
• Algeria, where we are from, favors sweeter flavors and is influenced by French cuisine.
Couscous, next to bread, is a staple in North African cooking. It is made by mixing semolina with water, drying it, and sieving it into small granules before steaming. Ras El-Hanout, a signature spice blend, adds complexity and fragrance to many dishes with ingredients like ginger, cumin, cinnamon, and cloves.
Alongside savory dishes, North Africans adore sweets. Desserts like baklava, made from layers of phyllo dough filled with nuts, and halwa, a sesame-based confection, are typically served with mint tea or coffee, concluding the meal with a delightful touch of sweetness.

What is mezze?
Mezze has a long history and likely comes from the Persian word maza, meaning 'snack'or'taste'.The Arabic word mazmiz, meaning 'to nibble', may also have inspired it. Mezze is more than just small bites; the portions are larger, and you can mix and match to create your own meal.

Although mezze is sometimes compared to tapas, the portions are larger. By creating your own mezze selection, you can enjoy a varied meal with delicious combinations of North African flavors.
